Our Black Pepper is a mild pecorino style cheese, infused with crushed Tellicherry peppercorns. The pepper gives the cheese a refreshing "hit" of spice.
Tellicherry peppercorns are the pick of the crop, larger in size than regular black peppercorns. They are sun dried and have a stronger flavour and an almost citrusy aftertaste.
Our Black Pepper Cheese is matured for at least three months to give the pepper a chance to become acquainted with the cheese that surrounds it.
SERVING SUGGESTIONS
On bread, on a cracker, melted onto a steak, chicken or hamburger. In pairing this cheese with beer, an IPA goes particularly well, but a lager or ale go well too. In wines, a white or sparkling wine is suggested. Its peppery punch makes it also very suitable for spirits, whisky or awamori.
